Meal Plan: 1/11/26 - 1/17/26

 I am hungry just thinking about this post for today. We had one night last week where we ended up going out for dinner and so I have a meal that we did not make. I will be making that tonight, which saved us a few bucks on groceries. Yes, overall it does not save us money to go out to eat. However, this was a necessary expenditure to confirm details for gig booking for one of the bands my husband is in.

One of the new meals I made last week was a huge success. I highly recommend the One Pot Cheeseburger Macaroni. I did make a couple of alterations. I doubled the meat and used 16 oz of pasta. We had spinach on hand and I added that in as well. I wish I had also added tomatoes and mushrooms but I didn't have those or think about getting them at the store.

The Cheesy Ranch Potatoes and Smoked Sausage were good flavor-wise. However, the cook time was not sufficient to cook the potatoes enough. I would consider partially cooking them before starting the recipe or just giving it longer in the oven, maybe covered?

The ramen recipe is one we have had before. Little A loved it enough to ask for seconds and to have it again when she had to eat leftovers the night we went out for dinner. So you can say this is mom tested and kid approved!

But without further ado, let's move on to this week's plan!

Sunday: Steak Tortellini in Cream Sauce

Monday: Parmesan Chicken with bread and salad

Tuesday: Lamb with baked potatoes and salad

Wednesday: Sheet Pan Shrimp and Broccoli

Thursday: Chicken Fajitas with corn

Friday: Burgers and chips

Saturday: Free-For-All
