Meal Plan: 1/4/26 - 1/10/26
One thing I absolutely love, love, LOVE to do is meal plan. It makes the week so much easier when you don't have to think too hard about what to cook and when.
Plus, if you're on a budget, it really helps you save money. We are not on a tight budget, per se. But we do like to be careful with our money to get the most bang for our buck.
I usually spend Friday nights or Saturday mornings planning out dinners for the next week. Our weeks start with Sunday and end with Saturday. Grocery shopping usually happens Saturday afternoons or Sunday mornings.
Our little one gets free lunch at school so we don't usually worry about lunch for her but will occasionally send her with PBJ and a snack or two. My husband and I take leftover dinner to work for lunch every day. He does not eat breakfast but drinks a cold coffee from a can every morning. I am hit or miss on breakfast and usually only eat it if I prep it.
I try to come up with a decent variety between my proteins and my starches, although this week I have gone heavy on the pasta. I'll balance it back by not really having any pasta next week. I also try to make Sunday's dinner a more comforting meal for a bigger "family" appeal to get ready for the new week ahead. And I try to keep Friday or Saturday or both as simple as possible.

Sunday - One Pot Cheeseburger Macaroni
Monday - Pork Ribs with green beans and biscuits
Tuesday - Thai Coconut Curry Ramen
Wednesday - Steak Tortellini in Cream Sauce
Thursday - Cheesy Ranch Potatoes and Smoked Sausage
Friday - Free-for-All
Saturday - Frozen Pizza
